Age of vines: 10 years.

Vinification: Natural Sparkling Wines fermented and vinified in stainless steel vats. 2 months of fermentation before bottling.

The bottles then rest minimum 28 months on slats and are then disgorged and muzzled without adding liquor.

Touche Mitaine Montlouis sur Loire

Plot: Touche Mitaine.

 

Terroir: Silex clay.

 

Grape variety: Chenin.

 

Age of vines: 35 Years.

 

Vinification: 100% fermentation in 228L barrels, 12 months aging.

 

Farming method: Guyot and Cordon de Royat pruning - Worked soil Manual harvest.

Terroir: Sandy clay.

 

Age of the vines: Centenary vines resulting from the first post Phylloxeric grafts. over 120 years old.

 

Vinification: Aging for 24 months in a 500 liter barrel.

Terroir: Siliceous clay.

 

Grape variety: Chenin.

 

Age of vines: 40 years.

 

Vinification: Fermentation takes place in barrels with 7-month aging, fermentation is stopped by cold.

The wine is bottled with sterile filtration.

Residual sugar: 13 gr / L.

 

Farming method: Mixed pruning: Guyot and Cordon de Royat - Soil worked Manual harvest.

Le Grand Clos

Terroir: Clay and limestone, soil of Bournais.

 

Grape variety: Chenin.

 

Age of vines: 65 years old.

 

Vinification: Fermentation and aging for seven months in stainless steel vats.

Residual sugar 60gr / L.

Grape variety: Côt or Malbec.

 

Age of vines: From 5 to 129 years old.

 

Vinification: 2/3 whole bunches, 1/3 destemmed, maceration for 3 weeks. One-year aging in casks and 500-liter barrels.

Vinification: 50% destemmed, whole harvest 50%.

Vinified in tapered wooden vats, vatting for 4 weeks.

Aging for one year in 228 liter barrels of 2 and 3 wines.

Cabernet Franc
