Plot: Le Moulin.

Terroir: Limestone clay.

Grape variety: Chenin.

Age of vines: 10 years.

Vinification: Natural Sparkling Wines fermented and vinified in stainless steel vats. 2 months of fermentation before bottling.

The bottles then rest minimum 28 months on slats and are then disgorged and muzzled without adding liquor.

AOC Montlouis sur Loire​

Parcelle : Le Moulin.

Terroir : Argilo Calcaire.

Cépage : Chenin.

Âge des vignes : 10 ans.

Vinification : Pétillant Naturel Vins fermentés et vinifiés en cuves inox. 2 mois de fermentation avant la mise en bouteille.

Les bouteilles reposent alors minimum 28 mois sur lattes, puis elles sont dégorgées et muselées sans adjonction de liqueur.

Age of vines: From 5 to 129 years old.

 

Vinification: 2/3 whole bunches, 1/3 destemmed, maceration for 3 weeks. One-year aging in casks and 500-liter barrels.

Vinified in tapered wooden vats, vatting for 4 weeks.

Aging for one year in 228 liter barrels of 2 and 3 wines.

4 weeks maceration in stainless steel vats with punching down during fermentation. No added sulfites.
